The campaign to encourage people to try vegan in January is now in its fifth year, and is all set to be bigger than ever with Veganuary predicting more than 150,000 people will go vegan for the month.
Last year, there were 60,000 registered participants from 172 countries, and one Veganuary supporter is Boxted resident, Teresa Norris.
She describes it as “one of the best decisions I have ever made” and she is now more aware of the foods she eats.
“My diet has become more healthy as I increase the number of fruits, vegetables and other plant based foods, and I eat whole foods wherever possible,” she says. And she has found that an ethical, healthy diet does not have to be a boring one! She has listed her favourite local restaurants in Colchester, Essex and beyond that serve great plant-based foods to help anyone thinking about taking part in Veganuary 2018, or just those who want to try more plant-based foods.
